well stumbled across this and it was awesome..
brown some slices of garlic. to flavour the pan , de-glaze the pan with onions ..
add slices mushrooms . until onions are soft and sweet. While you are waiting take that left over dried out chicken breast that you cooked at the beginning of the week for protein and not looking forward to eating .. slice and dice. ..

when the onion and mushrooms are ready add 3 table spoons of Thai peanut sauce . and chicken cubes cover and simmer to get moisture back in chicken
Server on bed of broccoli
