    Almond Joy Protein Bar

    Protein bars get a bad rap for being too close to candy bars – as if that’s a bad thing!
    When you get a craving for chocolate-covered candy, like a tasty Almond Joy, it’s definitely an upgrade to have a homemade version spiked with your favorite protein powder. And really, this one is a lot like the original candy aside from the protein, so making these is a win-win.

    Ingredients
    70g unsweetened coconut
    60g vanilla whey protein powder
    30g melted coconut oil
    50g almond butter
    2 tablespoons agave syrup (40g)
    Almonds for the top of the bar
    Dark chocolate to coat the bar

    Directions
    Add the coconut, protein powder, melted coconut oil, almond butter (make sure its soft) and the agave syrup into a large mixing bowl.

    Mix well and separate into six portions.

    Shape the portions into bars on a plate. Or roll into balls for a coconut almond truffle ball.

    Add almonds to the top of the mixture and press slightly into the bars. Or put into the middle of the truffle balls.

    Put the bars into the fridge for at least 30 minutes to set.

    Melt your chocolate or make your own. For these bars I used 4 teaspoons of coconut oil, 6 teaspoons of cocoa and 5 drops of liquid stevia. This makes way too much chocolate though so pour the remainder into patty pans or moulds for a homemade chocolate snack later on. Sometimes I use the left over chocolate to coat strawberries or I add cashews or hazelnuts to it to make a nutty chocolate treat.

    Dip the bars into the chocolate and then put back into the fridge.

    Take out and enjoy these are super yummy!

    These each have approximately 240 calories, 11g protein, 10g carbohydrate of which 8g is sugar and 20g fat. The store bought Almond Joy bar has 20g sugar with its first ingredient being corn syrup and 2g protein. I like the taste of the homemade bars better too and with 11g protein and real ingredients in every bar they will actually keep you feeling full as well.
