    in a blender mix
    1/2 cup of egg whites or egg beaters
    1/4 cup water
    1.4 cup cottage cheese ..I use pinapple flavor
    1/2 tablespoon golden flax seed meal
    and blend until frothy

    turn on stove and heat non stick pan with a little cooking spray

    add 1/4 cup buckweat flour + 1/4 cup almond meal to the blender

    let blend for at least a minute

    now this last ingrideint is important. other wise they taste horriable
    and if you add it too soon , it becomes too thick to poor

    so the last thing is to pulse in a 1/2 scoop vanilla whey protien powder

    poor in to the hot pan, unlike regular pancakes that you flip when all the bubbles pop
    you flip when you see a buble pop ..and maybe sooner
    if it is golden brown on the other side you flipped at the right time..

    Should make 3 solid size cakes..
    you can use walden farms syrups or be like me an use some all natural peanut butter

    mistake that is 1/4 cup cottage cheese not 1.4 cups
    also remeber no glutin ..so the fluff-i-ness comes from the beaten eggs... let the blender rip for a while to get the froth
    made them this morning...
